A quick and easy meal solution for lunch or dinner. Can be served as a starter with guacamole or with a side salad and it's so versatile, you can literally add anything to it. I made this in less than 15 minutes!
Ingredients:
1 large courgette, grated
8 tbsp gluten-free flour
1/2 cup smoked vegan cheese, grated
1 egg, beaten
1 tbsp smoked paprika
1/2 tsp garlic powder
1/4 tsp onion powder
handful coriander - chopped
1/2 tsp pepper
pinch of turmeric
1/4 tsp red chilli powder (optional)
salt to taste
3 tbsp avocado oil
Method:
Grate courgette in a bowl and squeeze water out, using fingers, muslin cloth or paper towel. This is a really important otherwise the mixture will be too liquidy. Transfer to mixing bowl.
Add in the remaining spices and flour and mix thoroughly. At this point you can taste the mixture for salt.
Add beaten egg and grated cheese. The mixture should not be runny. If it is, add a little more flour.
In a frying pan, add oil and set to medium heat.
Once heated, add one heaped tbsp of mixture per bite and cook until brown on both sides (around 2 minutes per side).
Feel free to add other veggies such as grated carrot or sweetcorn.
(Vegan friends - I'll be trying this again soon without the egg and will report back on how the mixture binds and cooks :) )
