These are SO good, you would never know that you were eating black beans in a brownie that was dairy and gluten free. Packed with protein and healthy fat (so practically guilt-free, right?), these brownies are a winner even with the chocolate brownie snobs in my house.
Ingredients:
1 tin of black beans
1/2 cup quick porridge oats
2 1/2 tbsp cocoa powder
1/2 cup golden syrup (or maple syrup)
2 1/2 tsp vanilla extract
1/4 cup coconut oil
1/4 tsp sea salt
1/2 tsp baking powder
100g dark chocolate chips
Method:
Preheat oven to 180C. Rinse black beans thoroughly and place in blender with all of the ingredients, except for the chocolate chips. Blend until it's a nice smooth texture. Add around half of the chocolate chips to blended mixture and stir through. Pour into a greased brownie tin. Sprinkle remaining chocolate chips over the top of the mixture. Bake in oven for 18-20 minutes.
NB: For an added nutritious benefit, you could add chopped walnuts to the mixture with the chocolate chips.
