Hands down this is one of the easiest ways to make a tasty chicken dish. I served this with veggies to cut out the grains, but you could also serve with quinoa or rice too. This marinade could work with tofu too, just be sure to drain all of the water first to get maximum flavor.
2 organic chicken breasts
1 tsp ground coriander
1 tsp cumin
1/2 tsp ground ginger
1/4 tsp cayenne pepper
1 tsp cinnamon
4 tsp paprika
1/2 tsp turmeric
1 tsp salt (add/reduce for personal preference)
Mix all dry ingredients together to make a dry rub mix.
Coat both chicken breasts with rub on all sides.
Place in airtight container in refrigerator to marinade for at least 45mins.
Place in baking tray and cook for 25-30mins at 375F.
Check the thickest part of the chicken breast is cooked to 165F using
a meat thermometer.
Serve with vegetables, salad or rice.
