Super quick, super tasty, super easy!
Serves 2
Ingredients:
1 tbsp coconut oil
1 onion, chopped
11/2 cups dried red lentils
1/2 cup kale, finely chopped without mid stem
1 garlic clove, crushed
1 inch piece ginger, grated
2 fresh green chilies, very finely chopped
11/2 cups vegetable stock/broth (I used chicken)
Salt as needed (I used around 2/12 tsp)
Method:
Add coconut oil to medium heat pan.
Add onions and cook down on low to medium heat until brown. This will take around 7-10 minutes
Add garlic, ginger and chili and cook until garlic is no longer fragrant. Usually 1 minute.
Add lentils, salt and half stock and cook on medium heat for around 3 minutes.
Add remaining stock and simmer on low heat for around 12 minutes.
Add most of kale, leaving handful for garnish at the end.
Cook for further 3 minutes until lentils are soft in texture, but not mushy.
Taste and add salt as required.
Serve and enjoy!
